  • 1 lb smoked sausage sliced
  • 1 lb chicken breast cubed
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 cup celery chopped
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
  • 2 tsp Cajun seasoning
  • 12 oz penne pasta uncooked
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 2 tbsp parsley chopped
  • 1/2 cup green onions chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add sausage and chicken, cooking until browned.
  • Add onions, bell pepper, and celery. Sauté until softened.
  • Stir in garlic, Cajun seasoning, paprika, salt, black pepper, and thyme. Cook for another minute.
  • Pour in chicken broth and diced tomatoes. Bring to a boil.
  • Add pasta and stir well. Cover and let simmer for 15-20 minutes until pasta is cooked.
  • Stir in parsley and green onions before serving.

Notes

This dish is best served hot and can be adjusted for spice level by adding extra Cajun seasoning or hot sauce.
